Broccoli-Mint Soup
Delicious and appetizing broccoli soup. You can have it as a main dish or as a light side dish. The recipe is very easy and can be prepared in a short time.
Equipment
- 1 skillet, pan or pot medium
- 1 measuring spoons
- 1 food processor or immersion blender
- 1 scale
Ingredients
- 1 tbsp coconut oil
- 1 onion chopped
- 600 g broccoli grated
- 250 ml milk skimmed or low fat
- 1 L vegetable stock or bouillon cube dissolved in 1L hot water
- 1 handful mint leaves fresh or dried
Instructions
- Heat the coconut oil in a skillet over medium heat. Once melted, add the onions and sauté until soft and translucent, about 5 minutes.1 tbsp coconut oil, 1 onion
- Add the broccoli and vegetable broth. Stir and leave covered. Bring to a boil and reduce the heat. Let simmer while covered for about 10 minutes or until the broccoli is cooked.600 g broccoli, 1 L vegetable stock
- Place the mixture in a food processor or blender, add the mint leaves and blend until you get the desired consistency.1 handful mint leaves
- Place the soup back in the pot. Stir in milk and heat up the mixture. Serve when ready!250 ml milk
